Avocado Egg Boats

Ingredients:
2 ripe avocados
4 eggs
1 cup quinoa, cooked
2 cucumbers, chopped
1/2 cup tomatoes, chopped
Sprinkle of salt and pepper
Directions:
Preheat oven to 400
Cook the quinoa while the oven is heating up and start prepping the avocados.
Cut the avocados in half and remove the pits.
Use a spoon to make the hole of the avocados a little bit bigger.
Arrange the avocados on a baking sheet so the hole is facing up and crack an egg in to each center of the avocado.
Bake them for 15-20 minutes until the clear part of the eggs are white and no longer translucent.
Place avocados on a plate and serve with the sprinkled quinoa, cucumbers, and tomatoes.
