Carrot Cake Overnight Oats


1 cup rolled oats (you can use any type of oats you want, I used Bob's Red Mill Gluten Free Steel Cut Oats)

1/2 cup carrot, finely grated (OXO Grips Peeler)

1 tsp ground cinnamon

1 tbsp chia seeds

3 tbsp raisins

1 tsp vanilla extract

1 tsp honey (you can use maple syrup instead if you want something a little sweeter)

1 and 1/4 cup almond milk, unsweetened


Mix the oats, carrot, cinnamon, chia seeds, and raisins in a large bowl.

Add the vanilla extract, honey, and almond milk to the bowl with the dry ingredients and mix everything together.

Transfer to a sealed container and TAAAADAAAAA you are done!

When you are ready to eat, top with any of your favorite toppings :) I used fresh figs, grain free granola, and a little extra cinnamon on top.

***This should last up to 5 days in the fridge
