Cauliflower Tots


Ingredients:

2 tbsp EVOO

2 minced garlic cloves

1/4 cup chopped onions

1 pound cauliflower rice (you can buy the cauliflower already riced in the frozen section at the grocery store)

2/3 cup vegan cheese

2/3 cup GF breadcrumbs

1 egg yolk

1 tsp onion salt

salt and pepper to taste


Directions:

Preheat the oven to 375 degrees.


Place a large skillet over medium heat and add 1/2 tbsp EVOO.


Add the minced garlic and the chopped onions and saute for 2-3 minutes. Once this is done, transfer to a mixing bowl.


Use remaining EVOO to the skillet and add the cauliflower rice. Saute the cauliflower for 4-5 minutes until it is nice and cooked through. Once this is done, let cool for a couple minutes.


Add the cauliflower rice to the bowl with the garlic and onions and stir together. Add the remaining ingredients and combine everything together.


Line a baking sheet with parchment paper.


Form the mixture into dime sized coins and place onto the parchment paper.


Bake for 20 minutes and then flip each one and continue to bake for another 15 minutes or until the tots are crispy.


Serve with your favorite dipping sauce and enjoy!
