I had originally made these GF/DF “cheesy” broccoli cauliflower tots for Livi, but then I tasted them and now I’m hooked #sorrynotsorry
I have started to get myself back into the kitchen after having Livi. Pre-pregnancy, I loved to cook. I was always in the kitchen creating new recipes or just making different recipes that I found from scratch. I have found that I actually love creating something that is both tasty and nutritious, but the best part is that it's so good that it doesn't even taste like it should be good for you.
These are great to top on a cauliflower rice bowl or even just to have a snack or appetizer when having people over (if we ever get back to that).

3 cups fresh or frozen broccoli
2 cups cauliflower
1/4 tsp onion powder
1/2 cup shredded vegan parm
2/3 cup almond flour
1 tbsp Italian seasoning
1/4 tsp garlic powder
1/2 tsp salt
Get to cooking:
Preheat oven to 400
Steam broccoli and cauliflower for 5 mins
Add to food processor to chop and mix together
In a large bowl, combine broccoli, cauliflower, and remaining ingredients
Form into balls and gently press making them a little flatter
Place all the tots onto a lined cookie sheet
Bake for 20-25 mins
Enjoy with your fav condiments (if your like Livi, she is obsessed with Cava lemon tahini😋 and if you’re like me, I love a good ole ketchup or vegan ranch😋)
