GF/DF Yogurt Fig Pie


Ingredients:

1/2 cup coconut oil

1 cup almond flour

1 cup coconut flour

1 tsp salt

1 pasture raised egg

1/2 tbsp honey

1/2 cup - 1 cup figs

1/2 cup - 1 cup blueberries

1/4 cup granola

1 cup yogurt (Lava or Forager for dairy free)


Directions

Preheat oven to 375 degrees


Heat coconut oil and add to a bowl with almond flour, coconut flour, salt, egg, and honey and mix together


Pour mixture into pie dish and kneed it into the dish until it is fully covered


Place in the oven for 15 minutes


Add yogurt to a bowl with the figs and blueberries and mix together


Once the pie crust is finished, let it cool for about 15-20 minutes


Add yogurt and berries mixture to the pie and spread evenly


Add honey and granola on top


Place in the freezer for 2-3 hours


Let thaw before eating and enjoy!
