Grilled Shrimp and Pineapple Salad

Ingredients:
1/2 lbs. Shrimp (peeled and deveined)
1 Pineapple
1 bunch radish
Arugula
1 bunch asparagus
1 cucumber
Salt
Pepper
Olive Oil
1 tsp. minced garlic
1 tsp. onion salt
Directions:
Heat grill pan or grill (if using grill pan, coat with olive oil)
Season shrimp in a bowl with a little salt, pepper, 1 tsp. minced garlic, and 1 tsp. onion salt and place on the grill/grill pan
Cook shrimp on each side so that they are a little charred on both sides and set aside
Place chopped pineapple onto the grill/grill pan and cook until charred and set aside
Place asparagus onto the grill/grill pan and cook until charred (cook to desired softness) and set aside
Place shrimp, pineapple, and asparagus into the refrigerator for about 20-30 minutes to cool
Place the arugula into a large bowl and start chopping the cucumber and radish into halves and add to the bowl
Once you're ready to eat, plate salad however you want -- if you want to make it like the above, place asparagus onto the plate and add a little arugula salad on top with the cucumbers and radish. Next, add the shrimp and the pineapple and top with your favorite dressing!
