Meatless Mushroom Balls


Ingredients:

1 tbsp chia seeds

3 tbsp water

4 oz shiitake mushrooms

1/3 cup yellow onion, chopped

1 tbsp balsamic vinegar

2 cloves garlic, minced

1 tsp salt

1/4 tsp pepper

1 cup almond flour (to make nut free, use oat flour or brown rice flour)

1 tbsp EVOO


Directions:

Preheat oven to 375 degrees and line a baking sheet with parchment paper.


Make a chia "egg" by combining the chia seeds and water in a small bowl and let it sit for about 10 minutes to thicken.


Combine the mushrooms, onion, balsamic vinegar, garlic, salt, and pepper in a food processor. Pulse until ingredients are combined and evenly chopped (make sure not to puree!). Add the chia egg and pulse to mix together.


Transfer mixture to a mixing bowl and add in the flour. Use your hands as needed to make sure the flour is distributed evenly.


Take 2 tablespoons of the mixture and shape into a ball and place on the baking sheet and repeat. Lightly brush each ball with EVOO.


Bake for 25 minutes. You will know when they are done when they are firm and browned on the bottom.


You can add to any type of GF pasta or zoodles or eat plain with your choice of sides :)
