Mediterranean Baked Cod


1.5 lbs cod (cut into 4-6 pieces)

2 tbsp minced garlic

1/4 cup fresh parsley leaves

2 tbsp green onion

1/2 cup chopped tomatoes

1/2 lemon, juiced

5 tbsp extra virgin olive oil

2 tbsp grape seed oil

1/3 cup almond flour (can use any flour you like)

1 tsp coriander

1/2 tsp paprika

1/2 tsp cumin

Salt + pepper


Preheat oven to 400 degrees

In a bowl, mix lemon juice and olive oil and set aside

In another bowl, mix flour and spices and set aside

Cut the fish into 4-6 pieces

Heat 2 tbsp grape seed oil on a skillet over medium-high heat

Dip fish pieces into the lemon juice/olive oil mixture and then into the flour/spice mixture

Add dipped pieces to the skillet and sear for about 2-3 minutes on each side

Add the parsley, chopped green onion, and the tomatoes

Add the minced garlic to the remaining lemon juice/olive oil mixture and pour over the fish

Place the skillet in the oven for bake for about 10 minutes, until the fish begins to flake

Serve and enjoy!
