Protein Pumpkin Muffins

In today's episode of a day in the life with Livi, we made protein pumpkin muffins with mama🧑🍳 These muffins are full of protein and plants🥳 These are great for breakfast, that sweet tooth or as a snack for the kiddos👶 If you have kids, get them involved in the process. They love to mix and lick anything!
I am usually not one to make things from a box, I like to make things from scratch, but when I do use something that is from a box, I make sure that the ingredients are organic with no artificial ingredients, which is why I like using Simple Mills products. To add a little more plant power and protein to these muffins, we added our favorite vegan vanilla protein powder, which has over 15 different types of plants to help us feel our best. We literally add this to everything: smoothies, yogurt, oatmeal, cookies, energy balls, etc.
I love to bake, whether it's from a box or a recipe, I'm all in.

The Goods:
1 box Simple Mills Pumpkin Muffin Mix
3 pasture raised eggs (you can make these vegan with a flax egg, but I have not tried this)
1/2 cup water
1/3 cup EVOO or avocado oil
1 serving vanilla complete
Sprinkle of crushed pecans and pumpkin seeds
Get to cooking:
Preheat your oven to 350 degrees
Mix the eggs, water, and oil in a bowl
Add the mix to the bowl with the other ingredients and combine
Add the vanilla protein and combine
Pour into a muffin tin
Sprinkle crushed pecans and pumpkin seeds on top
Bake for 20-25 minutes or until the center is fully cooked
