Cauliflower Rice, Shrimp, and Veggie Bowl


Ingredients:

1 bag of cauliflower rice (I use the bag to save on time)

1 bunch of asparagus, chopped

1 red pepper, chopped

1/2 cup mushrooms, chopped

1 lb. shrimp, peeled and deveined

1 tsp. salt

1 tsp. pepper

1 tbsp. minced garlic


Directions:

Wash and chop the veggies and place into a bowl. Sprinkle with olive oil, salt, pepper, and toss.


Pour cauliflower rice into a pan on medium heat and stir occasionally. Once thawed, mix chopped veggies in with the cauliflower rice and cover with lid. Cook until desired crunchiness, about 15-20 minutes.


Place shrimp in a pan on low/medium heat and cook until pink.


Mix shrimp with the cauliflower and veggies and cook for another 5 minutes.


Serve in a bowl and enjoy!
