Stuffed Pepper Soup


1 onion

1 green pepper

Grape seed oil

4 cups veggie broth

1/2 cup water

15oz can tomato sauce

28oz diced tomatoes

3 tbsp tomato paste

1 cup green lentils

1 tsp dried basil

1 tsp oregano

salt + pepper


Saute 1 cup onion and 1 green pepper in a pan with grapeseed oil

Add 4 cups veggie broth, 1/2 cup water, 15 oz can tomato sauce, 28 oz diced tomatoes, 3 tbsp tomato paste, one cup green lentils, 1 tsp dried basil, 1 tsp oregano, salt and pepper

Boil everything together and cook on medium heat for about 30 minutes

Divide into bowls and enjoy!
