Sweet Potato Kale Falafel

Ingredients:
1 sweet potato
1/4 cup kale
1 15oz can chickpeas
1/4 cup chopped onion
2 tsp minced garlic
1 tsp cumin
1/2 tsp onion salt
1/2 tsp chili powder
Salt and pepper
1/4 cup almond flour (can use any flour)
Directions:
Heat oven to 350 degrees
Bake the sweet potato either in the oven/toaster oven for 40 minutes or cook in the microwave for 4-5 minutes
Place the sweet potato in a blender with the drained chickpeas, kale, onion, and spices and mix together
Once mixed, place into a bowl and mix in the almond flour
Create balls either either a spoon or with an ice cream scooper and place onto a cookie sheet
Bake the falafel balls for 30-35 minutes depending on how crispy you like them
