2 large sweet potatoes
Set the oven to 350.
Line a baking sheet with tinfoil and spray avocado oil or olive oil so that the potatoes don't stick to the pan.
Cut the sweet potatoes into rounds or chunks if that's easier. If the potatoes are too hard to cut, you can stick them in the microwave for a few minutes to make them softer and easier to cut.
Place the cut potatoes into a bowl and season with a little olive oil, salt + pepper, and cinnamon. Mix all the ingredients in the bowl and then pour the potatoes on to the pan and separate.
Place the potatoes in the oven at 350 for about 20 minutes and check them to see if they are cooked the way you like them. If you want them a little softer, then cook them a little bit longer.
These are a delicious side to any dish - one of my favorites!
