Vegan Black Bean Quesadillas

Ingredients:
Onion
Pepper
Tomatoes
Black Beans
Avocados
Lime Juice
Salt
Pepper
Turmeric
Siete Tortilla
Vegan Cheese
Coconut Oil
Directions:
Sauté 1/2 onion, 1/2 red pepper, 1/4 cup tomatoes for 2-3 minutes, then add in the black beans for another minute
Pour mixture into a bowl and set aside
Smash two avocados in a small bowl with 1/2 lime juice. salt, pepper, and 1/2 tsp turmeric (optional)
Use tortilla wrap and spread a little avocado mixture onto 1/2 the tortilla with a little bean mixture on top and sprinkle vegan cheddar on top
Fold tortilla in half and place on stove and cook for about 2 minutes on each side, depending on how crispy you like it
Use extra avocado and salsa for dipping
