Veggie Filled Cauliflower Gnocchi



Ingredients:

Cauliflower Gnocchi

Broccoli

Peas

Mushrooms

Olive Oil

Salt + Pepper

Everything But the Bagel Seasoning

Pesto

Vegan Parmesan

Pine Nuts


Directions:

Place the gnocchi in the oven for 20 minutes on 350 degrees F


While gnocchi is baking, add broccoli, peas, and mushrooms, to the stove with olive oil, salt, pepper, and everything but the bagel seasoning for about 15 minutes


Add gnocchi to the pan with the veggies and mix together


Add in the pesto, vegan parmesan, and a sprinkle of pine nuts
