Cauliflower Gnocchi with Beetroot Almond Cream and Everything But the Bagel Mushroom Balls



Ingredients:

1 bag Trader Joe's cauliflower gnocchi

1 cup green peas

1 yellow squash

1 box mushrooms

1/3 cup chopped onions

1 tsp apple cider vinegar

1 tsp Trader Joe's everything but the bagel seasoning

2 tsp minced garlic

2 cups almonds (can also use cashews)

1 beet

1 cup water

2 tbsp minced garlic

2 tbsp lemon juice

1 tsp salt


Directions:

Preheat oven to 350 degrees


In a blender, combine the almonds, water, garlic, lemon, salt, and beet


Puree until smooth and set aside


Add mushrooms, chopped onions, onion salt, apple cider vinegar, everything but the bagel seasoning, and minced garlic to the blender and mix together


Pour mushroom mixture into a bowl and mix with almond flour


Create mushroom balls and place in oven for 25 minutes


Place cauliflower gnocchi on stovetop and cook on medium for 7-8 minutes


In a different pan, sauté peas and chopped squashed until cooked through


Add everything together and enjoy!
