Chia Pudding Parfait

Ingredients: Yields 2 servings

4 tbsp chia seeds

1 cup unsweetened almond milk (can use any milk you like)

1 tsp vanilla (optional)

1/2 cup raspberries (any fresh fruit)

1 tsp cinnamon

Granola, cashew butter, coconut flakes (choose any topping)


Pour chia seeds into a bowl with 1 cup almond milk

Add in the teaspoon of vanilla and cinnamon, if using

Refrigerate overnight to help the chia seeds set

Once you are ready to eat after it's been refrigerated, use any fruit you like, I chose raspberries, and create a layer of pudding and alternate with the fruit

Top it off with granola, coconut flakes, and cashew butter or any of your own favorite toppings!
