Chickpea Spinach Balls


1 can chickpeas, drained and rinsed

3 cups baby spinach

1/2 cup GF breadcrumbs

1 tbsp minced garlic

Flax egg (2 tbsp ground flax + 3 tbsp water)

1/4 cup + 2 tbsp almond flour (can use any type of flour)

1 tsp onion powder


Set oven to 350 degrees

Create the flax egg and set aside

Place the drained chickpeas into a blender and add the spinach, minced garlic, the onion powder and the flax egg, mixing until combined

Place the mixture into a bowl and add the breadcrumbs and the flour

Once everything is mixed together, roll into small or medium sized balls and place on a cookie sheet with parchment paper

Pop in the oven for 25 minutes and serve immediately

You can add these to any type of dish you want!

***You can store these for up to 4 days in the fridge or 3 months in the freezer
