Fall Salad

Ingredients:
Kale
Carrots
Cucumbers
Hearts of Palm
Artichokes
Cauliflower
Butternut Squash
Vegan Feta
Pistachios
Apple Cider Vinegar
Salt + Pepper
Directions:
Roast the cauliflower and butternut squash in oven for 45 minutes on 400 degrees and sprinkle with olive oil, salt and pepper
Chop 1/2 cup carrots, 1/2 cup cucumbers, 1/2 cup hearts of palm, and 1/2 cup artichokes
Mix roasted veggies with the raw veggies and the kale into a bowl
Add the vegan feta, pistachios, apple cider vinegar, salt and pepper
Toss everything together and enjoy!
