Lentil Soup


Ingredients:

2 tbsp olive oil

1 onion, diced

1 tbsp minced garlic

1 tsp ground coriander

1/2 tsp ground cumin

1/2 tsp paprika

1/4 tsp turmeric

1/4 tsp cinnamon

Sprinkle of pepper flakes

Salt + Pepper

1 bag of peas

1 bunch of celery, chopped

3/4 cup carrots, chopped

48oz vegetable stock

1 can 15oz crushed tomatoes

2 cups lentils, rinsed (use red or green lentils)


Directions:

In a large pot, heat olive oil over medium heat


Add minced garlic and onion and cook until onions are translucent


In a pan, heat olive oil over medium heat and add peas, chopped celery and carrots


Add coriander, cumin, paprika, turmeric, cinnamon, and red pepper flakes to the garlic and onions


Add the peas, celery, and carrots to the large pot and mix together


Add crushed tomatoes and vegetable stock and bring to a boil


Add in the lentils and reduce heat to a simmer until lentils are tender (lentils should take about 30 minutes to cook)


Add soup to bowls and enjoy!
